Big Blue Marble
First take a whole bunch of images and other data about the Earth's surface gathered by satellites. Then composite those images together (at 1-square-kilometer-per-pixel resolution) and map them onto a 3D model of a sphere, and you get a high-resolution accurate 3D model of the Earth's surface.
